【材料】
A:鸡肉碎350克、苏东250克(搅烂)、马蹄4粒、香菇4朵(浸软切粒炒香)、胡萝卜碎50克、芫
茜、葱、姜3汤匙
B:瑶柱汁1 1⁄2 汤匙、麻油1茶匙、绍兴酒1汤匙、盐和胡椒粉少许、鸡骨上汤1⁄2碗、红辣椒粒少许
【调味料】
盐1茶匙、胡椒粉1⁄2 茶匙、粟粉1 1⁄2汤匙、浓缩鸡上汤1茶匙
【沾料】
面包糠1碗
【勾芡】
粟粉水少许
【做法】
1.将全部材料A混合,加入调味料拌至起胶,搓成鱼丸形状。(图1-2)
2.把丸子裹上一层面包糠,放入热油内炸至金黄色后取出备用。(图3-6)
3.材料B放入锅内煮滚,加入粟粉水勾芡。(图7)
4.转小火,倒入肉丸兜匀,稍收干汁后即可上桌。(图8)

【Ingredients】
A:350g minced chicken meat, 250g minced squid, 4 pcs water chestnut, 4 pcschinese
mushroom (soaked, diced and pre-blanched in oil), 50g chopped carrot, 3 tbsp chopped coriander,
spring onion and ginger
B:11⁄2 tbsp scallop sauce, 1 tsp sesame oil, 1 tbsp shaoxin wine, dash of salt & pepper, 1⁄2 bowl
chicken stock, chopped red chili
【Seasoning】
1tsp salt, 1⁄2 tsp pepper, 11⁄2 tsp corn flour, 1tsp concentrated chicken stock
【Coating】
1 bowl bread crumb
【Thickening】
some starch
【Method】
1.Combine ingredients A in a mixing bowl, add seasoning and stir till springy, knead into fish
ball shape.(pic 1-2)
2.Coat meat ball with bread crumb and then deep fry in hot oil until golden brown.(pic 3-6)
3.Boil ingredients B in wok, thicken with some starch.(pic 7)
4.Toss in meat balls and cook until gravy slightly reduced, dish out and serve.(pic 8)
