轻口味芝士蛋糕Light Cheesecake

【材料】
牛油60克、Philladelphia奶油芝士250克(室温)、 盐¼茶匙,无糖发起鲜奶油120毫升、普通面粉50克(筛过)、栗米粉30克(筛过)、A蛋黄5粒、柠檬1粒取皮茸、A蛋白5粒、细糖120克、柠檬汁1茶匙
9寸可拆卸圆烤盘1个、铝箔

【装饰】
杏桃酱(涂面)、鲜奶油(打发装饰用)、水果(奇异果和草莓)

【做法】
1.把烤盘涂油后铺上铝箔(防止水分入侵蛋糕和芝士流出)。
2.隔水把牛油,芝士及盐煮至溶解。(图1)
3.加入无糖发起鲜奶油,筛过的面粉,栗米粉及蛋黄; 慢慢再加入柠檬 皮茸。(图2-4)
4.把烤炉预热至160°C,放入一个装水的托盘(水深2公分)。
5.另外把蛋白搅拌至发起后加入细糖,继续搅拌至顶尖。(图5-6)
6.将芝士奶油混合料加入蛋白料中,再加入柠檬汁,轻轻拌均匀(避免过度搅拌)。(图7)
7.把面糊倒入烤盘里,然后放入装水的托盘中,烤50-60分钟或至金黄色。(图8)
8.用竹签插入测试,以不沾污为准。
9.把烤好的蛋糕取出放凉,在蛋糕表面涂杏桃酱,然后收入冰箱。
10.吃前以鲜奶油和水果装饰。

【Ingredients】
60g butter, 250g Philladelphia Cream Cheese(at room temperature), ¼ tsp salt, 120ml dairy non-sweetened cream, 50g plain flour(sifted), 30g cornflour(sifted), 5 “Grade A” egg yolks, zest from 1 lemon, 5 “Grade A” Egg whites, 120 g castor sugar, 1 tsp lemon juice
9” round loosebottom cake pan, foil for wrapping over, apricot glaze
[optional] for brushing cake top, Fresh cream, whipped till stiff [for deco], Fruits – kiwi, strawberries [deco]

【Method】
1.Grease the cake pan & wrap over with foil. This is to prevent water from seeping into the cake & cheese from flowing out of the pan.
2.Stir butter, cheese and salt in a bowl over simmering water until smooth. Remove from heat.(pic 1)
3.Add the cream, sifted flour & cornflour, egg yolks. Stir in lemon zest until well mixed.(pic 2-4)
4.Pre-heat oven to 160°C, and place a pan filled with water up to 2cm into the centre of the oven.
5.Using an electric beater fitted with a balloon whisk, whisk egg whites until foamy before adding the sugar. Continue beating until soft peaks.(pic 5-6)
6.Fold the cream cheese mixture into the beaten whites, add in lemon juice and mix until combined(be careful not to over mix to deflate the egg whites). (pic 7)
7.Pour batter into prepared pan. Place pan in water bath, and bake for 50 minutes -1 hour or until cake is golden brown.(pic 8)
8.Test the cake by inserting a skewer into the middle of the cake, if skewer comes out clean, the cake is done.
9.Remove cake and leave cake to cool completely. Brush cake top with some apricot glaze if wished. Then chill cake in fridge.
10.Before serving. decorate with some whipped cream & fruits.
