【材料】
石甲鱼1条(约1-1.2公斤)、辣豆瓣酱150克、蒜茸1汤匙、指天椒3条、香茅1枝、嫩姜10克、番茄2粒、灯笼椒1粒、方形豆腐1块、鸡高汤300毫升
【调味料】
盐10克、白糖20克
【做法】
1. 把鱼清理洗净,切双飞,排在蒸盘中。(图1-2)
2. 将番茄及灯笼椒切块。(图3)
3. 起锅热油,爆香蒜茸,加入辣豆瓣酱、嫩姜、香茅及指天椒爆香。(图4-5)
4. 加入番茄和灯笼椒拌炒均匀,最后注入清水煮滚,调味。(图6)
5. 把豆腐排在鱼身上,然后淋上辣酱,大火蒸12-15分钟即可。(图7)

【Ingredients】
1 seabass(1kg-1.2kg), 1 tbsp chopped garlic, 150g spicy bean paste, 3 nos chilli padi, 1 packet square bean curd, 1 stalk lemon grass, 10g young ginger, 2 tomatoes, 1 capsicum, 300ml chicken stock
【Seasoning】
10g salt, 20g sugar
【Method】
1. Clean and wash the fish, cut butterfly and place on steaming dishware. (pic 1-2)
2. Cut tomatoes and capsicum into wedges. (pic 3)
3. Heat oil in wok, saute garlic till golden brown, add in spicy bean paste, lemon grass, chili padi and ginger until
fragrant. (pic 4-5)
4. Toss in tomatoes and capsicum wedges. Lastly pour in water, bring to boil and season to taste. (pic 6)
5. Place bean curd over fish, top with the spicy sauce and steam in high heat for 12 to 15 minutes, done. (pic 7)
