辣椒蛤蜊Spicy Lala

【材料】
蛤蜊1公斤、食油5-6汤匙、咖哩叶2束

【研磨香料】
葱头5粒、蒜头2瓣、姜2公分、香茅2枝、蓝姜1公分、指天椒2-3条

【配料】
咖哩粉+ 100毫升清水混合成糊、椰浆头100毫升

【调味料】
白糖1茶匙或适量、盐适量

【做法】
1. 把研磨料放入搅拌器内搅拌成茸。(图1-2)
2. 起锅热油,把研磨香料炒至香,然后加入咖哩糊料拌炒均匀。(图3)
3. 加入咖哩叶及蛤蜊拌炒至熟。(图4-5)
4. 注入椰浆及调味料煮滚即可上桌。(图6-7)

【Ingredients】
1 kg lala(washed & drained), 5-6 Tbsps cooking oil,2 stalks curry leaves

【Ground Spice】
4-5 shallots, 2 cloves garlic, 2cm ginger, 2 stalks lemongrass, 1cm galangal, 2-3 stalks chilly padi

【Sub-ingredients】
2 Tbsp curry powder + 100 ml water (mix into paste), 100 ml thick coconut milk

【Seasoning】
1 tsp sugar or to taste, salt to taste

【Method】
1. Blend the ground spice with blender into paste.(pic1-2)
2. Heat oil, sauté the ground spice paste until fragrant,adding the curry paste mixture. (pic 3)
3. Add the curry leaves and lala, stir to mix. (pic 4-5)
4. Pour in coconut milk, curry leaves and seasoning, bring to boil and dish out. (pic6-7)
