辣炒银针粉 Tasty Chicken Pin Noodles

【材料】
A:鸡胸肉125克(剁碎)、芥花油1汤匙、麻油1⁄2茶匙、盐1⁄2茶匙
B:银针粉(老鼠粉)500克、鸡精粉1⁄2茶匙
C:芥花油2汤匙、小葱头5粒(切片)、香茅2棵(剁碎)、疯柑叶6片(切细)、指天椒5条(剁碎)、姜花1朵(剁细)
【调味料】混合
酸柑汁5-6汤匙、糖1汤匙、鱼露1汤匙、胡椒粉1⁄2茶匙、研磨黑胡椒粒1⁄2茶匙
【装饰料】
芫茜及红萝卜丝各少许
【做法】
1.将鸡肉碎加入其余A料腌好。(图1)
2.在不黏锅内将鸡肉炒香至干水,捞起备用。(图2)
3.煮滚1⁄2锅水,加入鸡精粉,放入银针粉川烫好,捞起备用。(图3)
4.镬内烧热FAMILY CHOICE 芥花油,爆香所有C料,加入调味料炒香。(图 4)
5.加入鸡肉碎和银针粉捞均匀,即可趁热享用。(图5)

【Ingredients】
A:125g chicken breast meat(minced), 1⁄2 tsp salt, 1 tbsp Canola Oil, 1⁄2 tsp sesame oil
B:500g pin noodles (lo shi fun),1⁄2 tsp chicken stock powder
C:2 tbsp FAMILY CHOICE Canola Oil, 5 shallots(finely sliced),2 stalks lemongrass (finely sliced), 6 kaffir lime leaves(finely sliced), 5
bird’s eye chillies (finely sliced), 1 bulb ginger flower(finely sliced)
【Seasoning】mix well
5- 6 tbsp lime juice, 1 tbsp sugar or to taste, 1 tbsp fish sauce,1⁄2 tsp pepper, 1⁄2 tsp ground black pepper
【Garnishing】
Some corriander and shredded carrot
【Method】
1. Season minced chicken meat with remaining ingredients A. (pic 1)
2.Stir-fry the marinated chicken meat in a nonstick fry-pan till fragrant and dry. Dish out and leave aside. (pic 2)
3.Pour water to a boil in a pot. Add in chicken stock powder. Scald the pin noodles briefly and drain well in a plastic colander. (pic 3)
4.Heat FAMILY CHOICE Canola Oil in wok, saute ingredients C till fragrant. Pour in seasoning to mix.(pic 4)
5.Put in the chicken meat and pin noodles, toss briefly to combine. (pic 5)
