辣酱鱿鱼

【材料】
鲜鱿6只,虾仁200克,猪肉碎200克

【磨烂用料】
辣椒干10条(剪小段浸软)、红辣椒5条,小葱头10粒,南姜1小块,黄姜1小块,香茅1条(切细),峇拉煎1小块,石古仔3粒

【调味料】
A:盐1/2茶匙,粟粉1茶匙,胡椒粉1/2茶匙
B:糖1/2汤匙,盐1/2茶匙,阿三汁1/2碗,味精1/4茶匙

【做法】
1.鲜虾剁碎;鲜鱿去外膜,内脏及头洗净,抹干水份。 (图1-2)
2.将调味料A加入虾仁及肉碎捞匀,然后酿入鲜鱿内,并以牙签封口,隔水蒸10分钟,取出切片排盘。 (图3-6)
3.以3大匙油爆香磨烂用料,加入调味料B煮滚,然后淋入鲜鱿上便可。

【Ingredients】
6pcs squid, 200g shrimp, 200g minced meat

【Ground ingredients】
10 dried chili(cut into section, soaked till soften), 5 red chili, 10pcs shallots, 1 small piece each of galangal and turmeric, 1 stalk serai(sliced), 1 tsp balacan, 3pcs buah keras

【Seasoning】
A:1/2tsp salt, 1tsp corn flour, 1/2tsp pepper
B:1/2tbsp sugar, 1/2tsp salt, 1/2 bowl asaam jawa juice,1/4tsp MSG

【Method】
1.Mince shrimp; clean squid, devein and wash, pat dry. (pic 1-2)
2.Marinate minced meat and shrimp with seasoning A, and then stuff into squid, seal with tooth pith and then steam for 10 minutes. Slice and arrange in plate.(pic 3-6)
3.Sauté grounded ingredients with 3 tbsp oil until fragrant, add in seasoning B and bring to boil; pour on to squid and serve.
