    双层的达兰糕有着奇妙的口感,上层是绵密满口的椰奶榴莲香,下层却是满满的糯米香,超好吃。

    Step 1

    制法METHOD : 1.糯米洗净后浸泡4小时。Wash & soak glutinous rice for 4 hours.

    Step 2

    2.准备蒸炉,一旦水滚,即把椰浆倒入糯米和盐混合,然后过滤,把糯米倒入蒸盘内。Heat up steamer, once steamer comes to a rolling boil, pour the coconut milk, salt & drained glutinous rice into the tray.

    Step 3

    3.蒸20分钟,然后以筷子弄松糯米饭,然后再把它压紧。Steam for 20 minutes. After 20 minutes, fluff up the glutinous rice with either a pair of chopsticks or rice stirrer and mix thoroughly to combine then press down with a spatula.

    Step 4

    顶料To prepare topping :4.用电动搅拌器,把所有顶层材料(除了糖) 搅拌至细,可随意加入色素。Using an electric blender, combine all topping ingredients except the sugar in the blender. This purees the durian flesh and combines nicely with the rest of the ingredients with no lumps. Add colouring accordingly.

    Step 5

    5.把榴连肉混合料加糖煮3分钟,期间不停搅拌以免烧焦。Cook pureed mixture with sugar in a saucepan for 3 minutes or lightly heated with a wire whisk, stirring continuously to prevent burning.

    Step 6

    6.把顶层材料倒在糯米饭上,铺平后再蒸15-20分钟,期间每隔5分钟开盖一次。Pour topping batter over the pressed glutinous rice and steam further for 15-20 minutes. Open the steamer cover every 5 minutes.

    Step 7

    7.冷却后才切片吃。Leave to cool for a few hours before slicing.
