避风塘芋头茄子丁Causeway bay Yummy Eggplant

【材料】
茄子1条、芋头160克、指天椒4条、辣椒干30克、虾米30克(剁碎)、蒜头1粒(剁碎)、小葱头3粒(剁碎)

【调味料】
鸡精粉1/2茶匙、糖1/2茶匙、盐少许

【做法】
1.把茄子及芋头切大丁,过油备用。(图1-3)
2.镬中留1/2杯油,放入辣椒干炸香,然后捞出滤干油打碎待用。(图4)
3.镬中留少许油,以慢火炒香虾米、蒜头及小葱头至香脆。(图5)
4.回镬茄子及芋头丁,并加入指天椒、辣椒干碎和调味料兜匀便可。(图6-8)

【Ingredients】
1 eggplant, 160g yam, 4 chili padi, 30g dried chili, 30g dried shrimp (chopped), 1 pip garlic & 3 shallot (chopped)

【Seasoning】
1/2 tsp chicken powder, 1/2 tsp sugar, dash of salt

【Method】
1.Cut eggplant and yam into cubes, blanch in hot oil, drain.(pic 1-3)
2.Saute dried chili in hot oil until fragrant; drain and crush the crispy dried chili. (pic 4)
3.Keep some oil in wok; saute dried shrimp, garlic and shallot in low heat until fragrant and crispy.(pic 5)
4.Return eggplant and yam into wok, toss in chili padi, crushed dried chili and seasoning, stir to mix; dish out.(pic 6-8)
