酥心开心果 Pistachio Melts

【材料】
牛油225克、糖粉90克、蛋白45克、香草精2滴、蛋糕粉260克(筛过)、盐2克
【装饰材料】
剁碎开心果适量、白巧克力适量
【做法】
1. 把牛油和糖粉搅拌至发起。(图1)
2. 慢慢加入蛋白和香草精。(图2-3)
3. 再慢慢加入粉料和盐,搅拌成软面团。 (图4-5)
4. 把面团搓成20仙大小圆形,然后在中间压个凹洞。(图6-7)
5. 让面团滚动沾满开心果碎。(图8)
6. 然后放入预热至160℃ 的烤炉里烤 13-15分钟。(图9)
7. 待凉后把溶解的巧克力填入凹洞即可。(图10)

【Ingredients】
225g butter, 90g icing sugar, 45g egg white, 2 drop vanilla essence, 260g cake flour(sifted), 2g salt
【Garnishing ingredients】
Chopped pistachio for coating, white chocolate for topping
【Method】
1.Cream butter and icing sugar till fluffy. (pic 1)
2.Slowly add in egg white and vanilla essence. (pic 2-3)
3.Gently fold in the flour and salt and knead into soft dough. (pic 4-5)
4.Divide and shape dough into round balls the size of 20cent coin and press a hole at the centre. (pic
6-7)
5.Coat the balls with chopped pistachio. (pic 8)
6.Bake at 160℃ for 13 to 15 minutes. (pic 9)
7.Once cooled, pipe the melted chocolate into the centre. (pic 10)
