酥炸墨鱼Crispy Squid

【材料】
墨鱼3条(或鱿鱼)
【腌料】
盐1茶匙、咖哩粉1汤匙、黄姜粉 1⁄2 茶匙、味精1茶匙、糖1茶匙
【沾料】
面粉50克、薯粉50克(混合)、鸡蛋2粒(打散)
【做法】
1.墨鱼剖开腹部取出内脏,撕去薄膜,切除眼部,保留须头部连着墨鱼身。(图1)
2.把处理好的墨鱼抹干水分后,加入腌料拌匀,置放1-2小时。(图2)
3.将墨鱼沾上干粉,再裹上鸡蛋液,又再沾上干粉。(图3-5)
4.烧热炸油放入墨鱼以中火炸至香酥,即可捞出沥油。(图6-7)
【Ingredients】
3 squids (or cutter fish)
【Condiments】
1 tsp salt, 1 tbsp curry powder, 1⁄2 tsp turmeric pow-der, 1 tsp MSG, 1 tsp sugar
【Coating】
50g plain flour, 50g tapioca flour (mixed), 2 beaten eggs
【Method】
1.Cut squid, devein and remove membranes, cut off eyes but keep head and body intact.(pic 1)
2.Wash and drain squids and marinate with condiments for 1-2 hours.(pic 2)
3.Coat squids with dry flour and then dip in egg sauce and coat with flour again.(pic 3-5)
4.Deep fry in hot oil with medium heat until crispy drain. (pic 6-7)
