酱爆家乡花肉 Fried Streaky Pork with Soy Sauce

材料:
花肉1公斤、蒜米茸2汤匙、豆酱1茶匙、酱油2汤匙、指天椒2条、黑酱油1汤匙,糖1½汤匙
做法:
1 花肉切小块,放入沸水川烫备用。(图1)
2 镬内热少许油,爆香小辣椒和蒜米,加入豆酱粒、酱油、黑酱油和猪肉一起拌炒均匀。(图2)
3 加入水煮至滚后转小火,焖煮45分钟到1个小时至猪肉松软入味,间中以少许糖调味。(图3-4)
4 熄火后焗15分钟,让猪肉吸完酱汁,过后再开火炒到收汁到干。

1 kg pork belly, 2 tbsp chopped garlics, 2 pcs chili padi,
SEASONING
1 tsp soy sauce, 2 tbsp soy sauce, 1 tbsp black soy sauce, 1 tbsp sugar
METHOD
1 Cut the pork belly into small pieces and blanch with boiling water. (pic 1)
2 Heat some oil in wok, saute chilli padi and garlic till fragrant, add in pork belly and seasoning, fry well.
3 Add in water and bring to boil. Turn to low heat, continue cook for 45 minutes to 1 hour until the pork
is soften and tasty. Season with some sugar.
4 Off heat, simmer for another 15 minutes until the pork absorb the sauce, continue stir-fry until the gravy dry up, done.
