酸杨桃叁峇炒饭Fried Rice With Sambal Caram Bola (Nasi Goreng Sambal Belimbing)

【炒饭材料】
A:食油4汤匙 、蒜茸1粒(剁细)、白饭3碗、酸柑1粒(切半)
B:江鱼仔40克(炸香,稍压碎)、香茅1支(切细丝)、姜花1支(切细丝)、指天椒6条(切碎)、薄荷叶1束

【炒饭调味料】
江鱼仔粉1 1/2茶匙

【酸杨桃叁峇材料】
食油4汤匙、虾米35克、酸杨桃6粒(切片)、蒜头6瓣(剁碎)、小葱头8粒(剁碎)、指天椒碎10条(切细)、姜1小片(剁碎)

【叁峇调味料】
马来盏粉2/3茶匙、糖1 1/2茶匙、味精1/2茶匙、盐少许

【炒饭做法】
1.以4汤匙油爆香蒜茸至金黄色,倒入白饭及调味料炒至饭粒粒松散即可盛入碗中。(图1-2)
2.把B料铺在炒饭上。
3.进食时挤入酸柑汁及配酸杨桃叁峇。

【酸杨桃叁峇做法】
1.热油4大汤匙, 爆香虾米至脆取出待用。
2.将锅中剩余的油以小火爆香蒜茸、小葱茸及姜末。
3.加入指天椒、酸杨桃片及调味料拌炒。(图3-4)
4.最后加入己爆香的虾米拌炒均匀即可。(图5)

【Fried Rice Ingredients】
A: 4 tbsp cooking oil, 3 bowls white rice, 1 big garlic chopped, 1 lime (halved)
B: 40g ikan bilis (fried & crushed), 1 stalk serai (juliennes), 1 stalk bunga kantan (juliennes), 6 pcs bird’s eye chili (chopped), 1 stalk mint leaf

【Seasoning for fried rice】
1 1/2 tsp ikan bilis stock granule

【Sambal Caram bola Ingredients】
4 tbsp cooking oil, 35g dried shrimp, 6 pcs Caram bola, 6 pips garlic (chopped), 8 shallots (chopped), 10 chili padi(chopped), 1 slice ginger(chopped)

【Seasoning for sambal】
2/3 tsp balacan granule, 1 1/2 tsp sugar, 1/2 tsp MSG, dash of salt

【Method for fried rice】
1.Sauté chopped garlic with 4 tbsp oil until golden color, toss in white rice and seasoning, stir fry until fluffy.Dish out. (pic 1-2)
2.Spread ingredients B on top of fried rice.
3.Squeeze lime juice into rice and then serve with Sambal Caram bola.

【Method for Sambal Caram Bola】
1.Sauté dried shrimp with 4 tbsp oil until crispy, dish out.
2.Use the remaining oil to sauté chopped garlic, shallot & ginger until fragrant.
3.Toss in bird’s eye chili, caram bola slices and seasoning.(pic3-4)
4.Finally mix in fried dried shrimp and dish out.(pic 5)
