酸甜豆腐Deep-fried Tofu In Sweet And Spicy Sauce

【材料A】
水豆腐1大块(用模型切圆块)、生粉2汤匙、胡椒粉1/2茶匙、盐1/2茶匙

【酱料】
泰式甜辣椒酱4汤匙、辣椒酱1汤匙、番茄酱1汤匙、鱼露1汤匙、清水2汤匙、酸柑汁2汤匙

【材料B】
蓝姜花1枝(切丝)、大葱丝1汤匙、葱头2粒(切片)、香茅丝1汤匙、红辣椒1条(切丝)、指天椒2条(剁碎)、生芒果丝1/4杯

【做法】
1.把豆腐沾粉后抹去多余的粉。
2.起锅热油,把豆腐炸至金黄色和酥脆,滴干油。
3.在锅内热1汤匙油,倒入酱料煮至滚后,混入材料B,然后倒在豆腐上面,即可上桌。

【小贴士】
别把酱料和材料B混合后置放太久,会出水。可以先把材料B炒一炒再放在豆腐旁,然后才淋上酱料。

【Ingredients A】
1 large piece soft beancurd (cut into round slices with a cutter), 2tbsp cornflour, 1/2tsp pepper, 1/2tsp salt

【Sauce】
4tbsp Thai sweet chilli sauce, 1tbsp chilli sauce, 1tbsp tomato sauce, 1tbsp fish sauce, 2tbsp water, 2tbsp lime juice

【Accompanying ingredients B】
1 bunga kantan (finely shredded), 1tbsp sliced onion, 2 shallots (sliced), 1tbsp finely shredded lemon grass, 1 red chilli (seeded and sliced), 2 chilli padi (chopped), 1/4 cup shredded unripe mango

【Method】
1.Toss tofu slices in combined flour mixture. Shake off excess flour.
2.Heat enough oil in a wok until hot. Deep-fry tofu until golden and crispy. Drain from oil and place on a serving dish.
3.Put 1tbsp hot oil in a saucepan. Pour in sauce ingredients and bring to boil Mix cooked sauce with accompanying ingredients B then pour over toful.
