酸甜酱彩椒鲜菇串 Skewed Baby Oyster Mushroom

┃材料┃
小蚝皇菇250克、黄甜椒100克、红甜椒100克、青甜椒100克
┃调味料┃
黑胡椒粉1茶匙、幼盐¼茶匙、油1茶匙
┃沾酱┃
酸梅酱1汤匙、蕃茄酱3汤匙、辣椒酱½汤匙、白醋½汤匙、盐½茶匙、水½碗(预先拌匀待用)
┃装饰┃
香油2茶匙、炒香芝麻2茶匙
┃做法┃
1. 把小蚝皇菇修剪根部,冲洗沥干待用。
2. 将三色椒去籽,切斜角片,把材料和调味料一起拌匀。
3. 用竹签依序串起青椒、小蚝皇菇、黄椒、小蚝皇菇串,排放在烤盘。(图1)
4. 烤箱预热,以180°度烤6至8分钟即可,待凉。(图2)
5. 把调味沾酱放入锅煮至滚,拌入装饰料即可。(图3-4)

6. 烤好的小蚝皇菇串沾酱享用。

┃INGREDIENT┃
250g baby oyster mushroom, 100g each of yellow, red & green capsicum
┃SEASONING┃
1 tsp black pepper, ¼ tsp salt, 1 tsp oil
┃SAUCE┃
1 tbsp plum sauce, 3 tbsp tomato sauce, ½ tbsp chili sauce, ½ tbsp white vinegar, ½ tsp salt, ½ bowl water (mixes all)
┃GARNISHING┃
2 tsp sesame oil, 2 tsp toasted sesame seeds
┃METHOD┃
1. Trim baby oyster mushroom, wash and drain.
2. Remove seeds of capsicums, cut into wedges; marinate all ingredients with seasoning.
3. Skew tri-color capsicum alternate with baby oyster mushroom and arrange in baking tray. (pic 1)
4. Pre-heat oven to 180°C, grill 6-8 minutes, let cool. (pic 2)
5. Bring sauce mixtures to boil, drizzle in the garnishing ingredients. (pic 3-4)
6. Serve skewed mushroom with sauce.
