酿梅花南瓜 Stuffed Pumpkin

【材料】
南瓜300克、南瓜泥50克
【馅料】
虾胶80克、鱼胶80克、肥猪油20克(切丁)、红萝卜碎1汤匙、芫茜葱1汤匙(切碎)
【调味料】
麻油1/2茶匙、粟1茶匙、糖1/4茶匙、胡椒粉少许、盐少许
【做法】
1. 南瓜切2公分厚快,用模型刻出梅花形,中间挖出南瓜肉,并洒入少许粟粉待用。(图1-2)
2. 把馅料与调味料拌匀挞至起胶,然后酿入南瓜上,以中火蒸约10分钟至熟取出。(图3-6)
3. 把南瓜泥加入3大汤匙水及1小撮盐煮滚,并以少许粟粉水勾芡,便可淋入酿梅花南瓜上。

【Ingredients】
300g pumpkin, 50g mashed pumpkin
【Filling】
80g prawn paste, 80g fish paste, 20g pork lard (diced), 1 tbsp chopped carrot, 1 tbsp chopped coriander
【Seasoning】
1/2 tsp sesame oil, 1 tsp corn flour, 1/4 tsp sugar, dash of salt & pepper
【Method】
1. Cut pumpkin into plum flower shape, scoop out the flesh in the centre, and then coat with some corn flour.(pic 1-2)
2. Mixes filling ingredients with seasoning, blend with hand until springy, and then stuff into the pumpkin.Steam
stuffed pumpkin in medium heat for 10 minutes or until
cooked.(pic 3-6)
3. Mix mashed pumpkin with 3 tbsp water and dash of salt, and then bring to boil; thicken with some starch and pour
it over stuffed pumpkin to serve.
