金汤津白球Golden Chinese Cabbage Balls

【材料】
津白叶5片、韭菜1把

【馅料】
鱼胶300g、津白粒40g、木耳茸30g、红萝卜茸30g、鸡精粉2茶匙、盐1茶匙、糖1茶匙、胡椒粉少许、麻油½汤匙

【金汤材料】
金瓜泥2汤匙、水100g、芡水少许、蛋白1粒

【调味料】
咖喱粉½茶匙、盐½茶匙、鸡精粉1茶匙、胡椒粉少许

【做法】
1. 先把馅料全部混合均匀并打至起胶备用。(图1-2)
2. 把津白叶和韭菜飞水至熟,后过冷河备用。(图3)
3. 把津白叶摊开成圆形,中间放入30克的馅料并包裹起来,用韭菜把折口处绑好,放到蒸炉里蒸8分钟至完全熟透待用。(图4-6)
4. 热锅,放入金汤材料和所有调味料煮至完全溶解,勾上薄芡。(图7)
5. 最后,在汁里放入蛋白轻轻拨开,把津白球放入一起享用。(图8)

【INGREDIENT】
5 sprigs Chinese cabbage, 1 bunch chives

【FILLING】
300g fish paste, 40g chopped Chinese cabbage, 30g chopped black fungus, 30g chopped carrot, 2 tsp chicken powder, 1 tsp salt, 1 tsp sugar, dash of pepper, ½ tbsp sesame oil

【GOLDEN SOUP】
2 tbsp pumpkin puree, 100g water, some starch, 1 egg white

【SEASONING】
½ tsp curry powder, ½ tsp salt, 1 tsp chicken powder, dash of pepper

【METHOD】
1.Mixes all filling ingredients and blend with hand until springy. (pic 1-2)
2.Blanch Chinese cabbage and chives in boiling water and then rinse with tape water. (pic 3)
3.Spread open the Chinese cabbage, spoon 30g of filling on centre and wrap up; and then tighten with chive at both edges; then steam for 8 minutes or until cooked through. (pic 4-6)
4.Heat oil in wok, pour in all golden soup ingredients and all seasoning, stir to mix and thicken with starch. (pic 7)
5.Toss egg white into soup gently, put in Chinese cabbage balls and serve.(pic 8)
