金玉满堂Steamed Egg In Orange Juice

【材料】
鲜橙3粒(取汁约135毫升)、鸡蛋(打散)、细糖2汤匙、盐¼茶匙、香草精和橙味精少许、橙肉适量、烤黑白芝麻适量

【做法】
1. 橙汁和糖混合,搅拌至糖溶解。(图1-2)
2. 加入蛋液和盐,搅拌均匀后过滤。(图3-4)
3. 用茶杯装蛋液,以汤匙去掉周围泡沫,然后以铝箔覆盖。(图5-6)
4. 把杯放入锅里,倒入清水至杯身的一半满,以中火蒸7-8分钟或至凝结。(图7)
5. 取出蒸蛋,各铺上2瓣橙肉,撒上烤芝麻即可趁热吃。(图8)

【Ingredients】
3 oranges (squeezed for juice, to obtain 135 ml), 3 Eggs (beaten), 2 tbsp castor sugar, ¼ tsp salt, A little vanilla essence, A little orange essence, Some mandarin orange segments and toasted black and white sesame seeds for garnishing

【Method】
1. Mixes orange juice with sugar, stir to dissolve the sugar. (pic 1-2)
2. Pour in beaten egg and add salt. Stir to mix and then strain. (pic 3-4)
3. Pour the egg mixture into the tea cups. Use a spoon to remove any bubbles around. Cover with aluminum foil. (pic 5-6)
4. Arrange the tea cups in a saucepan. Pour hot water into saucepan to the height of half the tea cups. Steam over medium heat for 7-8 minutes or until set. (pic 7)
5. Remove the tea cups and add 2 – 3 segments mandarin oranges and a sprinkling of toasted sesame seeds. Serve hot. (pic 8)
