金黄芝士蛋糕 Baked Cheesecake

【底层材料】
Oreos饼干180克(压碎)、溶解牛油100克
【蛋糕材料】
Philladelphia奶油芝士500克(室温)、无糖发起鲜奶油125毫升、普通面粉10克、栗米粉1⁄2汤匙、 白糖90克、盐1⁄2茶匙、A蛋2粒
可可粉1汤匙+溶解牛油1汤匙
8寸可拆卸圆烤盘1个
【底层做法】
1.把烤盘涂油后铺上铝箔(防止水分入侵蛋糕和芝士流出)。
2.另外把Oreos饼干碎和牛油混合后铺在烤盘,压紧,收入冰箱待用。(图1-2)
【芝士蛋糕料做法】
1.把烤炉预热至170 °C ,放入一个装水的托盘。
2.把可可粉和溶解牛油混合后置放一旁。(图3)
3.把芝士奶油,盐及糖搅拌至浓厚。(图4)
4.加入栗米粉,搅拌均匀后加入蛋及无糖发起鲜奶油,只须刚刚溶合即可。(图5)
5. 把芝士混合料倒入饼干底层上,然后以旋转方式把可可料淋在上面呈云石状。(图6)
6.放入预热烤炉烤45-50分钟,用竹签插入测试,以不沾污为准。(图7)
7.把烤好的蛋糕取出放凉后收入冰箱,冷吃。(图8)

【Base Ingredients】
180 g Oreos(crushed), 100 g melted butter
【Cake ingredients】
500 g philladelphia cream cheese(at room temperature), 125 ml dairy non sweetened cream, 10 g plain flour,1⁄2Tbsp cornflour, 90 g sugar, 1⁄2 tsp salt, 2 “Grade A’ eggs 1 Tbsp cocoa powder + 1 Tbsp melted butter
8” round loose bottom cake pan
【To prepare base】
1. Grease the 8” loose bottom cake pan & wrap a foil over the pan. This will prevent the cheese from flowing out.
2. In a mixing bowl, combine crushed Oreos with the melted butter till well mixed and press onto the greased cake pan. Refrigerate until needed.(pic 1-2)
【To prepare cheese filling】
1. Pre-heat oven @ 170 °C . Place a tray of water in the oven for placing the cake later.
2. Combine cocoa powder with melted butter & set aside.(pic3)
3. In an electric beater, beat cream cheese with salt, sugar until cheese is creamy.(pic 4)
4. Beat in cornflour, flour until well mixed, and then beat in eggs and cream until just mixed.(pic 5)
5. Pour the cheese mixture over chilled oreo base. Swirl the cocoa mixture to create a marbling effect.(pic 6)
6. Bake cheesecake in pre-heated oven for 45-50 minutes or until skewer inserted in the centre comes out clean.(pic 7)
7. Remove from oven, leave to cool and refrigerate. Serve chilled.(pic8)
