【材料】
西芹150克(切片)、莲藕100克(切圆片)、红辣椒1只(切段)、云耳10克(浸软)、素红虾100克(素食原料店有出售)、姜6片

【调味料】
盐1/2茶匙、胡椒粉1/8茶匙、糖1/4茶匙、素味精1/4茶匙、麻油少许

【勾芡】
清水3汤匙、粟粉1⁄2茶匙(拌匀)

【做法】
1.将西芹、藕片、云耳放入沸水中微烫过,取出沥干待用。
2.镬里烧热1汤匙油炒香姜片,然后加入全部材料用大火再炒香,加入调味料煮沸,勾芡后浇上麻油即可上碟。(图1-5)

【Ingredients】
150g celery (slices), 100g lotus root (cut rings), 1 red chili (cut sections), 10g black fungus (soaked), 100g mock red prawns (store bought), 6 slices ginger

【Seasoning】
1/2 tsp salt, 1/8 tsp pepper, 1/4 tsp sugar, 1/4 tsp MSG, some sesame oil

【Thickening】
3 tbsp water + 1/2 tsp corn flour (pre-mixed)

【Method】
1.Blanch celery, lotus root and black fungus in boiling water and drain.
2.Heat 1 tbsp oil in wok, sauté ginger until fragrant, toss in all other ingredients in high heat and then add in seasoning, thicken and dish out. (pic 1-5)
