青瓜鸡丝卷Cucumber Chicken Roll

【材料】
鸡肉200克、日本青瓜1条、姜片10克、葱1棵

【调味料】
盐1茶匙、绍兴酒1茶匙

【酱汁材料】
芝麻酱 1 茶匙、生抽 1茶匙、白醋1茶匙、砂糖1茶匙、麻油1茶匙

【做法】
1. 煮滚一锅水,加入调味料、鸡肉、姜片及葱,煮至鸡肉熟,捞出待冷撕成丝。(图1-4)
2. 将青瓜切薄片,铺上鸡丝,卷好上碟。(图 5-6)
3. 酱汁做法:将麻酱、生抽、白醋、砂糖和麻油拌匀,淋上青瓜卷即可。(图 7)

【Ingredients】
200g chicken meat, 1 cucumber, 10g ginger(sliced), 1 stalk spring onion

【Seasoning】
1 tsp salt, 1 tsp Chinese cooking wine

【Sauce】
1 tsp each of sesame paste, light soy sauce, vinegar, sugar and sesame oil

【Method】
1. Boil a pot of water with the seasoning, blanch chicken meat, adding in ginger and spring onion until cooked and then shredded with hand. (pic 1-4)
2. Cut cucumber into long slices, place some shredded chicken meat on top, roll up and place on serving plate.(pic 5-6)
3. To prepare sauce: Mixes all sauce ingredients and pour over cucumber roll to serve. (pic 7)
