青蒜酱芝士手撕面包 Cheesy Pesto Pull Apart Bread

香蒜馅料
芫荽叶 60克
蒜 8-10瓣
橄榄油 3-4汤匙
融化牛油 60克
mozzarella芝士130克

全麦法包
牛油 2汤匙
麸片 40克
面包粉 200克
面粉 150克
幼盐 2茶匙
温水 200-220毫升
酵母粉 2茶匙
糖 2汤匙

做法
1 香蒜酱做法:将材料置入搅拌器内搅拌成茸。(图1)
2 法国全麦面包做法:将糖、酵母及半份温水拌匀,放置10分钟至起泡。
3 用KHIND搅拌机,以面团钩将法国全麦面包材料(温水除外),以3号速度拌打拌匀。(图2)
4 缓缓加入酵母混合料及剩余清水,拌打成软面团,取出继续揉搓5分钟。(图3-4)
5 取出面团,以保鲜膜包扎好静放一旁发酵至两倍大。
6 将面团排气后,放在涂油的烤盘上。将面团搓成长方形, 放在温室让它继续发酵至两倍大。
7 预热KHIND电烘炉至180℃,放入面团烤25-30分钟至面包呈金黄色。(图5)
8 取出面包,放置3-6小时待凉后,将面包切¾深,间隔一寸,不要切到底部。(图6)
组合
1 用汤匙将香蒜酱涂抹面包表面及塞进面包缝隙。(图7)
2 将芝士切成小片,塞入面包缝隙里。(图8)
3 将面包放入预热180℃的KHIND电烘炉里烤15分钟或至表面呈金黄色、芝士融化溶解为止。(图9)

 

Pesto  Filling

60g coriander leaves, 8 – 10 cloves garlic, 3-4 tbsps olive oil,
60g melted butter, 130g mozzarella cheese
WHOLEMEAL BAGUETTE
2 tbsps butter, 40g bran flakes, 200g bread flour, 150g plain flour, 2 tsps fine salt, 200 ml- 220 ml warm water, 2 tsps instant yeast, 2 tbsps sugar

METHOD
1 To prepare pesto: Place all pesto ingredients into blender, pulse blend until smooth. (pic 1)
2 To prepare baguette: Combine sugar, yeast & half of the warm water. Let sit for about 10 minutes until yeast foaming up.
3 Using KHIND Stand Mixer; fitted with the kneading hook, add all the baguette ingredients except water and turn on mixer on speed 3. (Pic 2)
4 Slowly add the yeast mixture and balance water, continue beating until a ball of dough is formed. Knead further for another 5 minutes. (pic 3-4)
5 Remove dough & cover with clingwrap and allow to rise until doubled in size.
6 Punch down the doubled size dough and place onto a greased tray. Shape the dough into a long rectangle, allow it to rise in a warm place until doubled in size.
8 Preheat KHIND Electric Oven at 180℃ and bake the baguette dough for 25-30minutes or until the top is golden brown. (pic 5)
9 Remove the baguette and let it cool down for 3- 6 hours. Cut 1″ ¾ deep diagonal cuts across the bread, not cutting all the way through and forming a grid.. (pic 6)
TO ASSEMBLE
1 Spoon the pesto into the cut portions and spread on the surface of the baguette.(pic 7)
2 Slice the cheese and insert into the cut portions of the loaf (pic 8)
3 Place it on the baking tray and bake in preheated KHIND oven for 15 minutes, or until the top is golden brown and the cheese is melted. Serve warm. (pic 9)
