韩国辣烤猪扒Spicy Korean Grilled Pork

【材料】
猪里脊肉4份(每份约125克,1公分厚)

【腌料】
黑豆豉20克、蒜头3瓣(剁碎)、姜2公分(去皮剁碎)、酱油2汤匙、 黑醋1⁄2汤匙、辣椒干12条、麻油2茶匙、黄糖5-6汤匙、盐适量、清水2-3汤匙

【腌料做法】
1.把黑豆豉用清水冲洗干净。
2.起锅热5汤匙油,把辣椒干爆香后盛出,沥干。辣椒油留后用。(图1)
3.用电动搅拌器把所有腌料搅拌至细。(图2-3)

做法
1.先把肉敲松,然后取1⁄4的腌酱腌妥。重复步骤至腌完三层的肉,盖好收入冰箱至少24小时。(图4-5)
2.烧热烤炉,把辣椒油涂在猪扒上,放在火上烧烤,每2分钟翻一次,直至肉熟透。(图6)
3.趁热配蔬菜吃。

【Ingredients】
4 pcs pork loin chop (each sliced 1cm thick, about 125 g, pounded)

【Marinade】
20g Chinese fermented black beans, 3 cloves garlic, (peeled and coarsely chopped), 2 cm fresh ginger(peeled and coarsely chopped), 2 tbsps light soya sauce, 1⁄2 tbsp black vinegar, 12 stalks dried chilly, 2 tsps sesame oil, 5-6 Tbsps light brown sugar or to taste, salt to taste 2-3 Tbsps water

【To prepare Korean marinade】
1.Briefly rinse the fermented black beans.
2.Heat 5 tbsp oil in a wok, pan fry the dried chillies, remove from oil. Keep oil for later use.(pic 1)
3.In an electric blender, combine all marinade ingredients and blend into paste.(pic 2-3)

【To prepare pork chop】
1.On a work surface, pound the pork slices thinly. Lay the pork slices in a large, shallow dish and coat with one-fourth of the black bean marinade. Repeat with the remaining pork and marinade for three more layers. Cover and refrigerate for up to 24 hours.(pic 4-5)
2.Light a grill or preheat a grill pan. Brush the pork with oil and grill over moderate heat, turning every 2 minutes, until nicely charred and cooked through, about 6 minutes.(pic 6)
3.Serve immediately with some fresh vegetables on the side or pickle.
