风沙走地鸡 Ginger Chicken

材料 :
菜园鸡1只、沙姜40克(搅拌成茸)、老姜300克、红辣椒1条(切粒)、生葱2棵(切粒)、芫茜1棵
调味料:
盐1汤匙、味精1茶匙、生抽3汤匙、糖2汤匙
淋鸡酱:
1汤匙生抽、清水3汤匙、糖½汤匙
做法 :
1 鸡洗净后放入煮滚沸中川烫至少半小时,鸡至浮起后即可捞起,放入冰水中浸泡。(图1)
2 沙姜与老姜分别剁碎,搅拌成茸备用。(图2)
3 将姜茸挤出汁,与其他调味料混合拌匀,放入热油里炸至香脆,捞起备用。(图3-4)
4 淋鸡酱做法:将材料混合煮至滚。(图5-6)
5 将鸡肉斩件排碟,淋入淋鸡酱,铺上炸香姜茸,撒上辣椒粒与葱粒,即可享用。(图7)

INGREDIENTS :
1 free range chicken, 40g kencur (Sha Jiang), 300g old ginger, 1 red chilli (chopped), 2 stalks spring
onion, 1 stalk coriander
SEASONING:
1 tbsp salt, 1 tsp MSG, 3 tbsp soy sauce, 2 tbsp sugar
SAUCE :
1 tbsp soy sauce, 3 tbsp water, ½ tbsp sugar
METHOD :
1 Clean and wash chicken, blanch in boiling water for at least 30 minutes; and then soak in cold water. (pic 1)
2 Chop kencur (Sha Jiang) and old ginger finely and mix up. (pic 2)
3 Squeeze out juice from ginger and mixes with seasoning ingredients; and then sauté in hot oil
until crispy, dish out. (pic 3-4)
4 To prepare sauce: Mixes sauce ingredients and cook until boil. (pic 5-6)
5 Chop chicken into pieces and arrange in serving plate; pour sauce over and sprinkle fried ginger
over, garnish with red chilli and spring onion.(pic 7)
