香浓咖啡排骨Coffee Flavour Ribs

【材料】
排骨500克、薯粉3汤匙、杏仁碎50克

【腌料】
糖2茶匙、盐1茶匙、鸡精粉2茶匙、松肉粉1茶匙、绍兴酒2汤匙、鸡蛋1粒、面粉2汤匙

【酱料】
A:清水80克、茄汁125克、LP酱50克、HP酱20克、浙江醋50克、橙汁40克、糖20克、莫扎里拉芝士30克
B:原味三合一咖啡粉100克、热水100克

【做法】
1. 将酱料A和酱料B各别混合起来,待凉再混合起来备用。(图1)
2. 先把排骨洗净砍件备用,与腌料拌匀腌制1小时。(图2-3)
3. 热油锅,把腌制好的排骨沾上薄薄的薯粉,放入热油里炸至排骨香脆熟透。(图4-5)
4. 锅里放入预先调好的混合酱料煮滚至稠,再把排骨加入,以中火翻炒至酱汁完全包裹着排骨,呈碟时撒上杏仁碎即可。(图7-8)

【INGREDIENT】
500g pork ribs, 3 tbsp tapioca flour, 50g chopped almond

【CONDIMENTS】
2 tsp sugar, 1 tsp salt, 2 tsp chicken powder, 1 tsp meat tenderizer, 2 tbsp Chinese cooking wine, 1 egg, 2 tbsp plain flour

【SAUCE INGREDIENT】
A: 80g water, 125g tomato sauce, 50g L&P sauce, 20g H&P sauce, 50g Chinese black vinegar, 40g orange juice, 20g sugar, 30g mozzarella cheese
B: 3 IN 1 original coffee, 100g hot water

【METHOD】
1. Mixes sauce A & B separately; combine after cooling down.(pic 1)
2. Chop ribs into small pieces and marinate with condiments for 1 hour.(pic 2-3)
3. Heat oil in wok, lightly coat ribs with tapioca flour and deep fry until crispy and cooked through. (pic 4-5)
4. Pour combined sauce in a clean wok, add in ribs and stir to mix with medium heat until all are well coated with sauce. Sprinkle chopped almond on top before serving.(pic 7-8)
