香炸肉片 Crispy Belly Pork Slices

材料:

五花肉200克(去皮切长薄片)、炸油适量

腌料:

蛋白1个、鸡精粉1茶匙、盐1/2茶匙、普通面粉1 1/2汤匙、薯粉1 1/2汤匙、小苏打粉1/4茶匙、胡椒粉1/4茶匙

糖浆材料:

白糖3茶匙、清水1/4杯、黑酱油1/4茶匙、盐适量

做法:

1.将五花肉切薄片,用腌料腌好。(图1-2)

2.把五花肉放入热油中炸至酥脆金黄色后滴干油。(图3)

3.扎白糖放入热锅煮成糖焦。

4.迅速加入清水煮成糖浆后加黑酱油和盐调味。(图4)

5.拌入炸肉片,搅拌均匀即可上桌,趁热吃。(图5-6)

INGREDIENTS:

200g belly pork(skin removed and sliced thinly), cooking oil for deep frying

MARINADE:

1 egg white, 1 tsp chicken stock granules, 1/2 tsp salt, 1 1/2 tbsps plain flour, 1 1/2 tbsps tapioca flour, 1/4 tsp bicarbonate of soda, 1/4 tsp ground white pepper

SYRUP DRESSING:

3 tsps sugar or to taste, 1/4 cup water, 1/4 tsp dark soya sauce, salt to taste

METHOD:

1.Marinate belly pork slices with marinade ingredients. (pic 1-2)

2.Deep-fry marinated belly pork slices in hot oil until lightly golden and crispy. Remove and drain. (pic 3)

3.Heat sugar in a wok until caramelized.

4.Quickly add water and simmer until syrup thickens, adding dark soya sauce & salt to taste. (pic 4)

5.Toss the crispy belly pieces back and mix briefly just to combine, serve immediately. (pic 5-6)
