香煎三文鱼 Pan fried salmon fish

材料:

三文鱼柳4副(每片120-140克) 、柠檬汁和胡椒粉适量

焦糖洋蔥:

大葱3粒(切丝) 、月桂叶2片、烟肉片100克(剁碎) 、盐、胡椒粉及栗米油适量

黑醋汁:

洋黑醋150毫升、盐、糖及蜜糖适量、大葱50克(剁碎) 、栗米油20毫升、薯粉+适量水

装饰:

杏仁片150克(烘过) 、鲜莳萝适量

做法:

焦糖洋蔥:

  1. 先把烟肉碎炒至脆后置放一旁。
  2. 用油炒大葱和月桂叶至焦糖化。
  3. 加入烟肉,以盐和胡椒粉调味。
  4. 保住温度。

黑醋汁:

  1. 用油煎大葱,然后加入黑醋。
  2. 以薯粉水勾芡。
  3. 用盐、糖及蜜糖调味。

煎鱼:

  1. 把三文鱼切成140克左右的份量。
  2. 以柠檬汁和胡椒粉腌妥。
  3. 下锅煎至理想的熟度和色泽,配焦糖洋蔥和黑醋汁吃。
  4. 鱼肉上面以杏仁片和鲜莳萝装饰。

Ingredients

4 fillet Salmon fillet 120-140gm
t.t Lemon pepper

seasoning

caramelised onion
3 No Onion- sliced
2 pcs Bay leaves
100 Gm pork bacon- dice
As needed Salt, pepper, corn oil

Balsamic sauce
150 Ml Balsamic vinegar
t.t Sugar, salt, honey
50 Gm Chopped onion
20 ml Corn oil
As needed Potato starch – dilute with water
Garnishes
150 Gm Almond flakes – toasted
Fresh dill- garnish

Method of Preparation:

To prepare caramelised onion

1. Fry bacon till crispy. Leave aside. 2.

Sauté onion and bay leaf with oil till caramelised.

3. Toss in bacon, season with salt and pepper.

4. Keep warm.

To prepare balsamic sauce

5. Sauté onion with oil, add in balsamic vinegar.

6. Thicken the sauce by adding diluted potato starch.

7. Season to taste with sugar, honey and salt.

To prepare salmon fish

8. Cut  fish into 140gm per portion

9. Season with lemon pepper seasoning.

10. Pan fried to perfection and served with caramelised onion and balsamic sauce.

11. Garnish with almond flakes and fresh dill.
