香煎牛粒配青葱炒饭Stir-fried Beef Cubes with Fried Rice

【材料】
白饭300克、洋葱粒60克、蒜米茸15克、青葱400克、蛋白1粒、炸蒜茸20克

【调味料】
盐1茶匙、鸡精粉1茶匙、黑椒粉1/2茶匙、生抽1汤匙

【配料】
牛粒100g、牛油1/2汤匙

【酱料】
美极鲜生抽40克、番茄酱50克、LP酱15克、糖25克、鸡精粉5克、味精少许

【做法】
1. 先把青葱去掉葱白部分,取青葱部分用搅拌机搅成茸后隔水取渣备用。(图1)
2. 蛋白拉油再沥干备用;酱料调配好备用。(图2)
3. 热油锅,倒入洋葱粒和蒜米爆香后,加入白饭炒至松软,加入调味料,兜炒均匀。(图3)
4. 最后,放入青葱茸、蛋白、炸蒜茸翻炒至饭团与其他材料充分混合均匀呈盘。(图4-5)
5. 热锅,放入牛油再加入牛粒,以中高温煎至牛粒焦香,再加入酱料翻炒至酱汁收干少许即可,与炒饭一同享用。(图6-7)

【INGREDIENT】
300g white rice, 60g diced onion, 15g chopped garlic, 400g chopped spring onion, 1 egg white, 20g fried garlic

【SEASONING】
1 tsp salt, 1 tsp chicken gnanule stock,1/2 tsp black pepper, 1 tbsp soy sauce

【SUB-INGREDIENTS】
100g beef cubes, 1/2 tbsp butter

【SAUCE】
40g Maggi soy sauce, 50g tomato sauce, 15g L&P sauce, 25g sugar, 5g chicken powder, dsh of MSG

【METHOD】
1.Use only the green part of spring onion, blend in blender and squeeze out juice, use only the residue.(pic 1)
2.Blanch egg white with oil and drain; mixes all sauce ingredients. (pic 2)
3.Heat oil in wok, sauté onion and garlic until fragrant; and then toss in white rice until loosen, add in seasoning and stir to mix. (pic 3)
4.At last, add in spring onion paste, egg white and fried garlic, stir-fry until well mixed. (pic 4-5)
5.In another clean wok, sauté beef cubes with butter at medium high heat until the meats burns slightly; toss in sauce mixture and keep stir-frying until gravy reduced; mix into fried rice and serve. (pic 6-7)
