香煎鱼饼配牛油果 Fish Cakes with Avocado Sauce

【材料】
200克吞拿鱼碎、700克马铃薯、2 粒牛油果(切丁)2粒蛋黄、100克面包糠
【调味料】
15毫升鱼露、15克泰国红辣椒酱、10克黄糖、盐和胡椒粉
【做法】
1. 用水把马铃薯煮熟后,取出滴干,磨成薯泥。
2. 加入所有材料和调味料混合均匀。
3. 制成圆薯饼状后,油煎至金黄色。
4. 配合牛油果沾酱呈盘。
【沾酱材料】
1粒牛油果、1⁄2粒柠檬( 取汁和皮)、1⁄2棵芫荽、盐和胡椒粉适量
【沾酱做法】
将所有材料倒入电动搅拌器,搅至细滑为止。

【Fish cake Ingredients】
200 g tuna flakes,700 g potato, 2 avocados (diced), 2 egg yolks, 100g bread crumb
【Seasoning】
15 ml fish sauce, 15g red curry paste, 10g brown sugar, salt and pepper to taste
【To prepare fish cake】
1.Boil potatoes, peel, and then mash.
2.Add in all other ingredients and seasoning to the potato mash and mixes well.
3.Form the mixture into small round cakes and sear with hot oil until golden brown.
4.Serve with avocado dipping sauce.
【Dipping Sauce Ingredients】
1 avocado, 1⁄2 lemon (juice and zest), 1⁄2 bunch coriander, salt and pepper to taste
【Method for dipping sauce】
Place all ingredients into a food processor, blend until smooth, done.
