香脆咸虾酱炸豆腐 Belacan Fried Tofu

【材料】
生花豆腐3砖、咸虾酱1汤匙、味精1茶匙、鸡蛋1粒打散、盐1⁄2茶匙
【配料】
日本青瓜1条(切丝)、大葱头1粒(切丝)、指天椒4条(切粒)
【沾粉】
面粉3汤匙、粟粉3汤匙
【酱料】
泰式辣椒酱1小碗、酸柑汁2汤匙、糖1茶匙
【做法】
1. 将豆腐每砖切开6边,加入咸虾酱、盐及味精拌匀,腌置隔夜至入味。(图1-2)
2. 捞出豆腐沥干水分,沾上鸡蛋液再裹上沾粉。(图3)
3. 放入热油中炸至脆,捞出沥油。(图4)
4. 将配料各切成丝,混入酱汁后,拌入炸豆腐即可享用。(图5-6)

【Ingredients】
3 blocks soft tofu, 1 tbsp belacan paste, 1 tsp MSG, 1 beaten egg, 1⁄2 tsp salt
【Sub-Ingredients】
1 Japanese cucumber, 1 onion, 4 chili padi (chopped)
【Coating】
3 tbsp plain flour, 3 tbsp corn flour
【Sauce】
1 small bowl Thai chili sauce, 2 tbsp lime juice, 1 tsp sugar
【Method】
1. Cut each tofu into 6 pieces, marinate with Belacan paste, salt and MSG for over-night.(pic 1-2)
2. Drain tofu, dip in egg sauce and then coat with flours.(pic 3)
3. Deep fry tofu in hot oil until crispy, dish out and drain.(pic 4)
4. Julienne sub-ingredients, mix with sauce ingredients, toss in fried tofu and serve.(pic 5-6)
