香脆咸蛋南瓜Crispy Salted Egg Pumpkin

【材料】
南瓜400克、熟咸蛋黄3粒(压碎)、鸡精粉½茶匙

【脆浆】
自发面粉160克、水适量、清油3汤匙、以罗果子盐1茶匙、盐¼茶匙

【调味料】
鸡精粉1茶匙、盐¼茶匙、糖½茶匙

【做法】
1.南瓜去皮切片,加入调味料,捞匀腌片刻。(图1)
2.把脆浆开成面糊,放入南瓜,均匀裹上面糊。(图2-3)
3.烧热炸油,放入南瓜,炸至脆熟,捞出沥油,备用。(图4)
4.锅中留油少许,放入咸蛋黄碎炒至起泡泡,并加入鸡精粉。(图5)
5.拌入已炸好的南瓜,快速兜匀便可。(图6)

【INGREDIENT】
400g pumpkin, 3 cooked salted egg yolks (crushed), ½tsp chicken powder

【BATTER】
160g self-rising flour, some water, 3 tbsp oil, 1 tsp Eno, ¼ tsp salt

【SEASONING】
1 tsp chicken powder, ¼ tsp salt, ½ tsp sugar

【METHOD】
1.Peel pumpkin and cut into slices; marinate with seasoning for a while.(pic 1)
2.Mixes batter ingredients and dip in pumpkin to coat. (pic 2-3)
3.Heat oil in wok, deep fry the pumpkin until crispy, drain.(pic 4)
4.Keep some oil in wok, sauté crushed salted egg yolk until bubbly, add in chicken powder. (pic 5)
5.Toss in fried pumpkin until well coated, done. (pic 6)
