香脆沙律茄饼Deep-Fried brinjal With Salad Sauce

【材料】
茄子2条、盐1/2茶匙、面包屑40克

【调味料】
浓缩鸡精1茶匙、胡椒粉适量

【面糊材料】
蛋黄1粒、自发面粉35克

【沙律酱(混合)】
美乃滋1/2杯、糖1茶匙、盐1/8茶匙、柠檬汁2汤匙、辣椒酱1 1/2汤匙

【做法】
1.将茄子洗净切六公分长段。将每一段茄子剖开两边,中间再划2刀但不要切断,撒上盐,放置3-4分钟后用纸巾抹干水份,加入调味料拌均待用。
2.蛋黄、自发面粉加适量清水拌成糊状,把茄子沾面粉后再沾面包屑,放入热油中炸至脆黄,捞出沥干油。
3.沾沙律酱吃。

【Ingredients】
2 brinjals, 1/2tsp salt, 40g bread crumbs

Seasoning
1tsp chicken stock, dash of pepper

【Batter Ingredients】
1 egg yolk, 35g self-raising flour

【Salad sauce】
1/2 cup mayonnaise, 1tsp sugar, 1/8tsp salt, 2tbsp lemon juice, 1 1/2 tbsp chilli sauce

【Method】
1.Cut brinjals into 6cm lengths. Halve it lengthwise and make 2 deep slits on each half. Spnkle over the salt and leave aside for 3-4 minutes. Pat-dry with kitchen paper towels. Rub in a little combined seasoning and leave aside.
2.Combine egg yolk and self-raising flour and enough water into a batter. Dip brinjal slices in the batter and toss in bread crumbs.
3.Deep-fry in hot oil until golden and crispy.
4.Serve with salad sauce.
