香茅芝士虾 Lemongrass Cheesy Prawns

【材料】
中虾350克、盐1茶匙、粟粉 1⁄2杯、炸油适量、磨碎黑胡椒粒1⁄8 茶匙
【芝士酱材料】
牛油30克、指天椒3条、咖哩叶2棵、香茅1根(只取白的部分,切细)、cheddar芝士2片(
切条)
【调味料】
淡奶5-6汤匙、糖1茶匙、鸡精粉1茶匙
【做法】
1. 把粟粉与盐放入碗中,加入虾捞匀。(图1)
2. 在镬内热油,放入虾以大火煎熟。捞起沥干油。(图2)
3. 在平底锅内煮溶牛油,爆香香茅、咖哩叶及指天椒。(图3)
4. 加入芝士和调味料,拌炒至稠状。(图4)
5. 倒入虾及黑胡椒碎,拌炒均匀,盛碟享用。(图5)

【Ingredients】
350g medium-sized prawns(keep whole), 1 tsp salt, 1⁄2 cup tapioca flour, oil for deep-frying,1⁄8 tsp coarsely ground black pepper
【Cheese Sauce Ingredients】
30g butter, 3 bird’s eye chillies(sliced), 2 stalks curry leaves, 1 stalk lemongrass (white portion,finely sliced), 2 slices cheddar cheese
【Seasoning】
5-6 tbsp evaporated milk,1 tsp sugar or to taste, 1 tsp chicken stock powder
【Method】
1. Put tapioca flour and salt in a bowl and toss in prawns. Shake off excess flour.(pic 1)
2. Heat enough oil in wok, fry prawns over high heat until just cooked. Dish out and put aside. (pic 2)
3. Melt butter in pan, sauté lemongrass, curry leaves and chilli padi until fragrant.(pic 3)
4. Add cheese and seasoning ingredients. Stir until mixture turns creamy.(pic 4)
5. Put back prawns and sprinkle in coarse ground black pepper. Stir gently so that prawns are thoroughly coated with the sauce. Dish out and serve immediately.(pic 5)
