香草奶油千层蛋糕 Vanilla Cream Crepe

【千层面皮材料】
鲜奶500毫升、牛油60克、细糖30克、盐茶匙、A蛋6粒,普通面粉135克(过筛)、薯粉30克(过筛)、香草精1茶匙
【奶皇馅材料】
A:蛋黄粉70克、栗米粉35克、 鲜奶250毫升、鸡蛋5粒、牛油40克、香草精1茶匙
B:鱼胶粉1茶匙+2汤匙清水、甜鲜奶油300克
【面皮做法】
1.把牛油煮至溶解后熄火。(图1)
2.将鸡蛋、白糖和盐混合,搅拌至糖溶解。加入牛奶和筛过的粉料,搅拌均匀后加入溶解的牛油和香草精拌至细滑。(图2-3)
3.把面糊过滤待用。(图4)
4.将23公分不黏锅加热,涂少许油,舀入1杓的面糊,旋转锅子以让面糊覆盖整个锅面。(图 5)
5.以小火煎至熟后翻转一次,把完成的面皮取出放在布巾上待凉。(图6)
6.重复步骤至面糊用完。过程中以保鲜膜或布巾盖着面皮以防干燥。
【奶皇馅做法】
1.隔水把奶皇馅的所有材料A煮至稠,然后以保鲜膜覆盖待凉。
2.把鱼胶粉和水混合,让它膨胀后放入微波炉高火煮5-8分钟,搅拌至溶解。
3.把甜鲜奶油打至发起后加入鱼胶液,再与奶皇料混合均匀。(图7)
【组合】
1.把一片面皮铺平,涂上一层奶皇馅,叠上一片面皮,再挤入一圈的奶皇馅,重复步骤至面皮用完。(图6-8)
2.收入冰箱,冷吃;吃前切块。

【Crepe batter Ingredients】
500 ml fresh milk, 60 g butter, 30 g castor sugar, tsp salt, 6 “Grade A” eggs, 135 g plain flour, 30 g tapioca flour, 1 tsp
vanilla essence
【Custard Cream filling Ingredients】
A:70 g castor sugar, 35 g cornflour, 250 ml Fresh milk, 5 eggs,
40 g Butter, 1 tsp vanilla essence
B: 300 g sweetened fresh cream, 1 tsp gelatine + 2 Tbsps water
【To prepare crepe batter】
1.Place butter in a saucepan over medium heat. Once butter melts, turn off heat.(pic 1)
2.Combine eggs, sugar and salt in a mixing bowl, stir until sugar dissolves, add in milk, sifted flours and mix well. Pour in the melted
butter and vanilla essence, mix into smooth batter. (pic 2-3)
3.Sieve the batter into a clean container.(pic 4)
4.Heat a 9” non-stick pan, lightly grease pan, pour a ladle of batter, swirling the pan to allow batter to cover the whole pan. (pic 5)
5.Cook over low heat, flipping crepe over once. Remove crepe & place onto a tea towel to cool.(pic 6)
6.Repeat until all the batter is used. Close with cling film or kitchen towel to prevent crepes from drying out.

【To prepare Custard cream filling】
1.In a double boiler or a non-stick pot, cook all custard cream ingredients A, stirring continuosly with a wire whisk until it thickens.
Leave to cool, covered with a cling film.
2.Mix gelatine with water and let it plum up. Microwave on high for 5-8 minutes, stir to dissolve gelatine.
3.Using a balloon whisk, whip the sweetened cream until stiff peaks. Mix in gelatine to combine thoroughly. Mix in custard cream.(pic 7)
【To assemble】
1.Lay a piece of crepe, spread some custard cream over, cover with another layer of crepe.Continue repeating until all is filled.(pic 8)
2.Dust crepe surface with chocolate powder.Chill cake & serve cold; slice as and when needed.(pic 9-10)
