香菇肉酱面Mushroom Meat Sauce Noodle

【材料】
菠菜面条 2 人份、香菇5朵(浸软切丁)、肉碎200克、蒜茸及小葱茸1汤匙、辣豆瓣酱1汤匙、青菜适量(烫熟围边)、葱花1汤匙

【调味料】
蚝油1大匙、糖1茶匙、麻油1汤匙、生抽1汤匙、高汤1/2杯、粟粉1茶匙

【做法】
1.烧热2汤匙油爆香葱蒜茸,下肉碎、香菇丁及辣豆瓣酱炒香。(图1-2)
2. 注入高汤煮滚后,加入其余调味料拌炒至入味,盛起备用。(图3)
3.菠菜面以滚水汆烫熟捞出,拌入香菇肉酱,上碟。(图4)
4.把葱花撒面及青菜围边即可。

【lngredients】
2 servings of spinach noodle, 5 pcs mushroom (soaked & diced), 200g minced meat, 1 tbsp chopped garlic and shallot,1 tbsp spicy soy bean paste, some green vegetables (scalded), 1 tbsp chopped spring onion

【Seasoning】
1 tbsp oyster sauce, 1 tsp sugar, 1tbsp sesame oil, 1 tbsp soy sauce, 1/2 cup stock, 1 tsp corn flour

【Method】
1.Heat 2 tbsp oil in wok, saute garlic and shallot until fragrant, then toss in minced meat, mushroom and spicy soy bean paste.(pic 1–2)
2.Pour in stock, once boiled ,add remaining seasoning, stir fry well and dish out.(pic 3)
3.Scald noodle and arrange on plate, mix with meat sauce.
4.Sprinkle spring onion on top of noodle and garnish with vegetables.
