香辣煎茄子 Spicy Egg Plant

材料A :
茄子2条开
材料B :
素峇拉煎10克、辣椒糊5汤匙
调味料 :
番茄汁3汤匙、糖1½汤匙、盐½茶匙、咖哩粉1汤匙
做法 :
1 將茄子开半,放入热油炸熟,捞起滴干油备用。(图1)
2 镬内烧热少许油,爆香B材料。(图2-3)
3 再加入调味料,转小火煮3分钟。(图4-6)
4 將炸好的茄子排盘,倒入煮好的辣椒糊料即可。

INGREDIENTS A :
2 egg plant
INGREDIENTS B :
10g mock b Belacan, 5 tbsp chili boh
SEASONING :
3 tbsp tomato sauce, 1 ½ tbsp sugar, ½ tsp salt, 1 tbsp curry powder

METHOD
1 Cut egg plant into half, deep fry in hot oil until cooked, drain and set aside. (pic 1)
2 Heat oil in wok, sauté ingredients B until fragrant. (pic 2-3)
3 Add in seasoning and turn to low heat, simmer for 3 minutes. (pic 4-6)
4 Arrange fried egg plant in serving plate, pour chili sauce over and serve.
