香辣药材猪脚醋 Herbal Trotters In Spicy & Vinegar Sauce

【材料】
A:猪蹄750克(砍小件)、姜150克(拍烂)、当归20克、党参20克
B:指天椒6条、辣椒干8条、黑蒜头1整粒、红枣10粒
C:黑醋400毫升、苹果醋200毫升、黄糖150克、清水1.5公升
D:鲜磨菇5朵(切片)、盐适量
【做法】
1. 以沸水川烫猪蹄,然后滴干水。(图1-2)
2. 把当归、姜及党参放入干锅炒香后加入猪蹄、材料B和C。(图3-7)
3. 煮至滚后转小火焖煮至猪蹄熟软。
4. 加入鲜磨菇,再继续煮1-2分钟,然后以盐调味即可。(图8)

【Ingredients】
A:750 g trotter(cut into pieces), 150g ginger (lightly smashed), 20g tong kwai slices, 20g tong sum
B: 6 bird’s eye chillies, 8 dried chillies, 1whole smoked garlic bulb,10 red dates
C: 400 ml black vinegar, 200 ml apple cider vinegar,  150g brown sugar,1.5 litres water
D: 5 fresh button mushrooms(sliced), Adequate salt to taste
【Method】
1. Scald trotter pieces in hot water, drain and put aside. (pic 1-2)
2. Dry-fry tong kwai slices, tong sum and ginger in a pot
till fragrant. Add in trotter pieces, ingredients B and C.(pic 3-7)
3. Cook to a boil. Reduce the heat and simmer till sauce is reduced and trotter is tender.
4. Add fresh button mushrooms. Cook briefly for 1-2minutes then stir in salt to taste. (pic 8)
