香酥芋香片 Crispy Yam Roll

┃材料┃
芋头300克、冬菇3朵、马蹄3粒、素火腿30克、芫茜1棵、淡腐皮1张(剪成18cm×18cm)方形
┃调味料┃
盐½茶匙、糖¼茶匙、胡椒粉¼茶匙、五香粉¼茶匙、麻油½茶匙
┃面糊┃拌匀
普通面粉3汤匙、清水3汤匙
┃点缀┃
青瓜、小番茄适量
┃做法┃
1. 芋头去皮洗净,抹干切粗片,以大火蒸25分钟至熟取出,趁热压成泥。(图1)
2. 把冬菇、马蹄、素火腿、芫茜切碎。
3. 芋泥加入切碎材料和调味料搅拌均匀。(图2-3)
4. 将腐皮摊平,刷上薄面糊,铺上芋泥馅,把腐皮卷成长条状,再刷上薄面糊,待用。(图4-6)
5. 烧热油锅,放入芋香卷,炸至金黄色,取出沥干待凉,切成片状,以青瓜、小番茄点缀,沾上番茄酱。(图7)

┃INGREDIENTS┃
300g yam, 3 pcs Chinese mushroom, 3 pcs water chestnut, 30g mock ham, 1 stalk coriander, 1 sheet
bean curd skin ( cut into 18cm×18cm)
┃SEASONING┃
½ tsp salt, ¼ tsp sugar, ¼ tsp pepper, ¼ tsp 5 spiced powder, ½ tsp sesame oil
┃BATTER┃mixed
3 tbsp plain flour, 3 tbsp water
┃GARNISHING┃
Some cucumber and cherry tomatoes
┃METHOD┃
1. Peel yam, wash and cut into slices; steam in high heat for 25 minutes or until cooked; mash it whilst
hot. (pic 1)
2. Chop Chinese mushroom, water chestnut, mock ham and coriander finely.
3. Mixes chopped ingredients and seasoning into mashed yam. (pic 2-3)
4. Flatten bean curd skin on table top, spread batter over and top with yam filling, roll up and seal with
batter. (pic 4-6)
5. Heat oil in wok, deep fry yam rolls until golden brown, drain. Once cool down cut into slices and
serve with cucumber and cherry tomatoes, use tomato sauce as dipping sauce. (pic 7)
