马铃薯洋葱派Potato Onion Pie

【材料】
马铃薯2个、洋葱末1杯、青葱末1汤匙、鸡蛋2颗、莫扎里拉芝士碎1杯、橄榄油1汤匙

【调味料】
海盐1/2茶匙、黄糖1茶匙

【做法】
1.马铃薯去皮、蒸熟后稍微压成泥状,备用。(图1)
2.将马铃薯泥、洋葱末、青葱末、莫扎里拉芝士碎和调味料放入碗中拌匀。(图2)
3.打入鸡蛋,拌匀成糊状,备用。(图3)
4.将玛芬烤盘涂上一层橄榄油,用勺子取适量的马铃薯蛋糊,填入模内。(图4)
5.放进烤箱,以200℃烤约20分钟至表面呈黄金、有点微焦即可。

【INGREDIENT】
2 potatoes, 1 cup chopped onion, 1 tbsp chopped spring onion, 2 eggs, 1 cup grated Mozzarella cheese, 1 tbsp olive oil

【SEASONING】
1/2 tsp sea salt, 1 tsp brown sugar

【METHOD】
1.Peel potato and steam until cooked, mash and set aside.(pic 1)
2.Combine potatoes, onion, spring onion, Mozzarella cheese and seasoning in mixing bowl.(pic 2)
3.Beat in egg and mixes well. (pic 3)
4.Grease muffin mold with olive oil, scoop mashed potato mixture into mold. (pic 4)
5.Bake in pre-heated oven at 200℃ for 20 minutes or light brown.
