马铃薯鱼块 Potatoes Fish Cutlets

【材料】
A:鱼柳400克、盐1茶匙、黄姜粉及咖哩粉各1⁄2茶匙
B:马铃薯400克、A蛋1⁄2粒、蒜头1瓣(剁碎)嫩姜茸5克、青红辣椒各1条 剁碎)、莞荽茸2汤匙、酸柑汁1茶匙、盐适量、面包糠1⁄2杯、面粉1-2汤匙
【做法】
1. 鱼柳加入其余材料A拌匀,用不粘锅煎熟,然后弄碎备用。(图1-2)
2. 把马铃薯煮至软身,去皮趁热捣烂成薯泥。
3. 马铃薯泥加入其余材料B拌匀,最后拌入鱼肉。(图4-6)
4. 试味后把材料搓成圆块,然后收入冰箱凝固。(图7)
5. 热足够的油,把鱼块炸至金黄色即可。(图8)

【Ingredients】
A:400 g fish fillet, 1 tsp salt, 1⁄2turmeric powder, 1⁄2 curry powder
B: 400g potatoes,1⁄2 “Grade A’ egg, 1 clove garlic(chopped), 5g young ginger (chopped finely), 1 stalk  green & red chilly (finely chopped), 2 tbsps heaped coriander leaves (chopped), 1 tsp lime juice, salt to taste, 1⁄2 cup dry bread crumbs, 1- 2 tbsps plain flour
【Method】
1. Rub the fish fillet with remaining ingredients A. Heat some oil in a wok, pan fry the marinated fish fillet until cooked. Flake the fish flesh. Set aside. (pic 1-2)
2. Boil potatoes until tender, peel & mash potatoes while they are still warm.
3. In a mixing bowl, combine, mashed potatoes with remaining ingredients B. Add in the fish flesh, mix well.(pic 4-6)
4. Form mixture into round patties, refrigerate to keep them firm. (pic 7)
5. Heat oil & fry the cutlets until golden brown. Drain on paper towels. (pic 8)
