鱼香茄子Minced Meat Eggplant

【材料】
绞肉200克、辣豆瓣酱2茶匙、茄子500克、蒜末、葱末、姜末各一汤匙、绍兴酒适量、粟粉水(勾芡)

【调味料】
糖1茶匙、酱油1茶匙

【做法】
1.将茄子切成滚刀块,放入热油中炸至软即可,将油沥干待用。(图1)
2.另外在锅内烧热少许油,放入绞肉炒干,加入葱、姜、蒜、辣豆瓣酱及绍兴酒,快炒后加入一碗水,以大火煮至滚。(图2-5)
3.加入茄子以小火煮至入味,加入调味料拌匀后,用粟粉勾芡即可。(图6)

【Ingredients】
200g minced meat, 2 tsp spicy soy bean paste, 500g eggplant, 1 tbsp each of chopped spring onion, chopped garlic and chopped ginger, some chinese cooking wine, corn starch for thickening

【Seasoning】
1 tsp sugar, 1 tsp soy sauce

【Method】
1.Cut eggplant in wedges and deep fry in hot oil until soften, dish out and drain. (pic 1)
2.Keep some oil in wok, sauté minced meat until fragrant, toss in chopped spring onion, garlic, spicy soy bean paste and wine; stir-fry briskly and then pour in 1 bowl water, bring to boil again. (pic 2-5)
3.Add in eggplant, change to low heat and simmer until eggplant infuse the flavor; season with sugar, salt, thicken with starch and dish out. (pic 6)
