鱼香银芽Salted Mock Fish Bean sprouts

【材料】
芽菜200克、红萝卜30克(切丝)、鲜冬菇30克(切丝)、素咸鱼30克、芹菜20克(切段)

【调味料】
盐1/2小匙、糖1/4小匙、白醋3小匙、麻油1/2小匙

【做法】
1.素咸鱼以少许油炸香备用。(图1)
2.把银芽去头去尾,冲洗沥干备用。
3.锅烧热1大匙油,加入香菇炒香,续加入其余材料和调味料,大火快炒。(图2-4)
4.最后加入炸素咸鱼炒匀,即可上碟享用。(图5)

【Ingredients】
200g bean sprouts, 30g carrot (juliennes), 30g fresh shitake mushroom (juliennes), 30g mock salted fish, 20g Chinese celery (cut into sections)

【Seasoning】
1/2 tsp salt, 1/4 tsp sugar, 3 tsp white vinegar, 1/2 tsp sesame oil

【Method】
1.Deep fried mock salted fish with some oil, set aside.(pic 1)
2.Remove head and toe of bean sprouts, wash and drain.
3.Heat 1 tbsp oil in wok, sauté Chinese mushroom until fragrant, add in all other ingredients and seasoning, stir-fry with high heat briefly.(pic 2-4)
4.Toss in mock salted fish and dish out. (pic 5)
