鸡肉香肠饭FRAGRANT CHICKEN AND SAUSAGE RICE

【材料 】
腊肠1条(切斜片)、鸡全腿1只(去骨切小块)、姜丝1汤匙、蒜茸1汤匙、麻油1½汤匙、香米2杯(洗净滴干)、清水3杯、橄榄菜1汤匙

【腌料 A】
蚝油1汤匙、麻油1茶匙、酱青1汤匙、胡椒粉¼茶匙、姜汁1汤匙、老抽少许

【腌料 B】
酱青1½汤匙

【装饰料】
青葱粒1汤匙、红辣椒丝少许

【做法】
1.用腌料A腌鸡肉至少20分钟。(图1)
2.滴干白米,以腌料B腌妥。(图2)
3.起锅热1茶匙麻油,把姜丝炒香,然后加入香肠,稍微焯至焦后盛出。(图3)
4.倒剩余的麻油入锅,加入腌鸡肉和橄榄菜,略炒后盛出。(图4)
5.将白米倒入同一个锅里,略炒后熄火。(图5)
6.把一半的米放入电饭煲里,然后加入一半炒鸡肉,再铺上米,叠上剩余的炒鸡肉。(图6-7)
7.启动电饭煲,把米煮成饭。(图8)
8.在完成煮饭前,放入炒香肠,然后焖5分钟后才盛出享用。

【INGREDIENTS】
piece Chinese sausage (sliced at a slant), 1 whole chicken leg (deboned and cut into bite-sized), 1 tbsp ginger shreds, 1 tbsp minced garlic, 1 ½ tbsp sesame oil, 2 cups fragrant white rice grains (rinsed and drained), 3 cups water, 1 tbsp Olive Vegetable

【MARINADE (A) 】
1 tbsp Oyster Sauce, 1 tsp sesame oil, 1 tbsp Light Soy Sauce, ¼ tsp pepper, 1 tbsp ginger juice, a little Soy Sauce

【MARINADE (B)】
1 ½ tbsp Light Soy Sauce

【GARNISHING】
1 tbsp chopped spring onions, some red chillies slices

【METHOD】
1.Mix chicken with marinade A, set aside for at least 20 minutes. (pic 1)
2.Combine drained rice with marinade B.(pic 2)
3.Heat wok with 1 teaspoon sesame oil. Fry ginger shreds till fragrant. Add sausage, sauté well then dish out. (pic 3)
4.Heat wok with remaining sesame oil, add in marinated chicken and Olive Vegetable. Fry briefly and dish out. (pic 4)
5.With the same wok, fry marinated rice briskly. (pic 5)
6.Scoop half portion of rice into rice pot. Add in half portion of pre-fried chicken pieces with remaining rice and top up with remaining chicken pieces. (pic 6-7)
7.Cook rice in electric cooker till done.(pic 8)
8.At the end of cooking time add in pre-fried sausages. Toss to mix. Steep rice for 5 minutes before dishing out to serve.
