鸡肉鲜蔬卷 Meat Rolls With Stuffed Vegetable

【材料】
鸡胸肉1块、牛蒡50克、四季豆6条、红萝卜1小条、青葱3棵

【调味料】
A:胡椒粉少许、盐少许
B:橄榄油1汤匙、橙汁2汤匙

【做法】
1.将鸡胸肉片薄然后撒入调味料A腌10分钟待用。(图 1)
2.牛蒡去皮切成丝,再以盐水浸泡5分钟,取出沥干。(图 2)
3.四季豆切成2段,红萝卜去皮切条,然后连同青葱川氽沸水,捞起待用。(图 3)
4.取一片鸡胸肉摊平,面上撒入少许栗粉,放入适量牛蒡丝、四季豆、红萝卜条,然后卷起并以青葱扎紧。(图 4-7)
5.锅中烧热少许油放入鸡肉卷煎至两面呈金黄色,便可取出排碟。(图 8)
6.面上淋入B料便可上桌。

【功效】补肝

【Ingredients】
1pc chicken breast meat, 50g burdock, 6pc french beans, 1 small carrot, 3 stalks spring onion

【Seasoning】
A: Dash of salt & pepper
B: 1tbsp olive oil, 2tbsp orange juice

【Method】
1.Slice meat thinly and then marinate with seasoning A for 10 minutes.(pic 1)
2.Skinned and juliennes burdock, and then soak in salt water for 5 minutes, drain.(pic 2)
3.Cut French beans into 2, skinned carrot and cut into strips; blanch them together with spring onion in boiling water, drain.(pic 3)
4.Flatten breast meat, sprinkle some corn flour on top, place some burdock, french beans and carrot on top, roll up and tighten with spring onion.(pic 4–7)
5.Sear the meat rolls with some oil until both side turns brown.(pic 8)
6.Pour ingredients B on top and serve.
