麦片烤鸡Baked “Fried” Crispy Chicken

【材料】
全鸡1只(砍8-10件)、额外橄榄油

【鸡肉腌料】(混合)
牛奶125毫升、盐1汤匙、白糖1汤匙、芥末1汤匙、胡椒粉、茶匙

【沾料】
A:普通面粉1/2杯、盐1/2茶匙、即煮麦片1杯
B:普通面粉1杯、鸡蛋2粒

【做法】
1.将鸡肉放入腌料中,浸泡30-60分钟,最好收在冰箱浸泡隔夜。(图 1)
2.混合沾粉料A,把沾料B中的鸡蛋放在碗中打散,把面粉倒入在另一个碟子中。
3.先将鸡块沾蛋液,再沾面粉,最后压入沾料 A 中,滚满麦片,然后收入冰箱30分钟。(图 2-3)
4.把鸡肉块排入烤盘,淋少许橄榄油。(图 4-5)
5.放入烤炉以 200℃焗烤20分钟,然后翻转,再烤20分钟至皮脆即可。(图 6)

【Ingredients】
1 whole chicken (cut into 8-10 pieces), extra olive oil for drizzling

【Condiments】(combined)
125ml milk, 1 tbsp salt, 1 tbsp coarse sugar, 1 tbsp mustard, 1 tsp ground pepper

【Coating Ingredients】
A: 1/2 cup plain flour, 1/2 tsp salt, 1 cup oats(quick cooking)
B: 1 cup plain flour, 2 eggs

【To prepare Chicken】
1.Soak chicken in the condiments mixture for a minimum 30 minutes-1 hour. The best would be marinating over night in the refrigerator. (pic 1)
2.Combine coating ingredients A in a bowl, set aside.
3.Laghtly beat eggs in another bowl and place plain flour in plate.Dip each piece of chicken into plain flour, then coat with the beaten egg mixture.(pic 2)
4.Lastly press the chicken pieces in the coating ingredients A, to allow the oats to coat properly. Refrigerate until set or immediately place chicken pieces, skin-side down, in a greased baking dish. (pic 3)
5.Drizzle chicken pieces with some extra olive oil.(pic 4-5)
6.Bake chicken at preheated oven 200℃ for 20 minutes. Turn chicken over and bake an additional 20 minutes or until cooked through and crispy. (pic 6)
