麦片鱼柳 Crispy Cereal Fish Fillets

材料 :
白色鱼柳700克、盐和胡椒粉适量
脆炸粉 :
Nestum麦片1杯、普通面粉⅓杯、粘米粉⅓杯、芝麻2汤匙、盐¾茶匙、胡椒粉½茶匙、蛋白1粒(打散)
酸奶蘸酱 :
希腊式酸奶1杯、蒜头1瓣(剁碎)、九层塔叶1杯(剁碎)、蜜糖2茶匙、柠檬汁1茶匙、黑胡椒粉适量
做法 :
1. 把鱼肉切80克1份,然后用盐和胡椒粉腌了收在冰箱。
2. 把所有脆炸粉干料混合,蛋白装在小碟里。
3. 先将每块鱼肉沾蛋白后在沾干粉,然后两边拍打掉多余的粉,再收入冰箱30分钟。
4. 起锅热油,把鱼肉炸至微黄,以纸巾吸干油。
5. 将所有酸奶蘸酱材料混合后放入冰箱冷藏。
6. 炸鱼蘸酱吃。

 

INGREDIENTS :
700g white fish fillets, some salt and pepper
CRISPY COATING MIXTURE :
1 cup Nestum, ⅓ cup plain flour , ⅓ cup rice flour, 2 tbsp sesame seeds, ¾ tsp salt , ½ tsp white
pepper , 1 egg white(lightly beaten)
BASIL YOGURT DIP :
1 cup Greek style yogurt, 1 clove garlic(finely grated), 1 cup basil leaves(finely chopped), 2 tsp honey,
1 tsp lemon juice, freshly ground black pepper
METHOD :
1. Cut fish into 80g pieces, marinate with salt andpepper and keep chilled.
2. Combine all dry ingredients for coating. Prepareegg white in a small dish.
3. Dip each piece of fish in egg white, and thencoat with dry mixture and pat gently on bothsides. Chill fish in fridge for 30 minutes.
4. Heat oil to deep fry fish in 2-3 separate batches,till light golden. Drain on kitchen paper towels.
5. Combine all yogurt dip ingredients. Chill.
6. Serve fish with dip.
