麻辣皮蛋豆腐 Spicy Century Egg Tofu

【材料】
豆腐1盒、皮蛋1粒(切粒)、花椒1⁄2茶匙、辣椒干2条、菜脯1汤匙(剁碎)、大葱1粒
(切细)青葱1棵(切粒)
【调味料】
蚝油11⁄2汤匙、麻油1⁄2茶匙、黑酱油1⁄2茶匙
【做法】
1. 锅内热少许油,爆香辣椒干,加入大葱、花椒和菜脯,炒至香,捞起沥油备用。(图1)
2. 将豆腐放入沸水中煮片刻,捞起备用。(图2)
3. 将豆腐切大块,铺在盘中,淋上调味料,铺上麻辣混合料、皮蛋及青葱,即可享用。(图3-4)

【Ingredients】
1pct soft tofu, 1 century egg(diced), 1⁄2 tsp Szechuan pepper, 2 dried chilies, 1 tsp pickled radish(chopped), 1
big onion(shredded), 1 stalk spring onion(chopped)
【Seasoning】
1 1⁄2 tbsp oyster sauce, 1⁄2 tsp sesame oil, 1⁄2 tsp black soy sauce
【Method】
1. Heat oil in wok, saute dry chilies till fragrant, add in big onion, Szechuan pepper and pickled radish, fry well,
drain and set aside.(pic 1)
2. Blanched tofu in hot water,drain. (pic2)
3. Cut tofu into cubes and place in the serving plate. Pour seasonings, saute ingredients and century
egg on top, sprinkle spring onion over,serve immediately.(pic 3-4)
