黄梨咖喱明虾Pineapple Curry Prawn

【材料】
明虾8只、黄梨肉300克(切小块)、叻沙叶5梗(取叶)、清水 250 毫升、浓椰浆 250 毫升

【香料】
A:小葱头40克、蒜头15克、南姜20克、黄姜15克(切片)、清水150毫升
B:辣椒糊30克、海鲜咖喱粉25克

【调味料】
盐1茶匙、糖3茶匙、鸡精粉1茶匙

【做法】
1. 把全部香料A放进搅拌机里研磨成糊,倒出后加入香料B拌匀。
2. 镬里烧热 3 汤匙油,倒入所有香料,以小火拌炒10分钟至香。
3. 注入清水、椰浆、调味料、叻沙叶和黄梨煮滚,以小火煮 5 分钟。
4. 加入虾拌均,以中小火拌煮 5 分钟或至虾熟透即可熄火盛起。

【Ingredients】
8 pc grass prawns, 300g pineapple flesh (cut into pieces), 5 stalk Daum Kesum (take leaves only), 250ml water, 250ml coconut milk

【Spice Ingredients】
A:40g shallots, 15g garlic, 20g galangal, 15g turmeric (sliced), 150ml water
B:30g chili paste, 25g fish curry powder

【Seasoning】
1 tsp salt, 3 tsp sugar, 1 tsp chicken powder

【Method】
1. Place all spice ingredients A in an electric blender, blend into paste, pour out in bowl and mix in spice B.
2. Heat 3 tbsp oil in wok, sauté all spice ingredients in low heat for 10 minutes until fragrant.
3. Pour in water, coconut milk, seasoning, Daum Kesum and pineapple; once boiled, turn to low heat and simmer for 5 minutes.
4. Add in prawns, cook for another 5 minutes with medium low heat or until prawns turns red, dish out.
