黄梨阿三虾 Pineapple Asam Prawn

材料 :
大虾500克(洗净)、黄梨300克(切块)、洋葱1粒(切片)、羊角豆100克(洗净,切段)、红辣椒1条(切片)、金凤叶3棵

香料(打烂):
葱头仔10粒(去皮)、蒜头4瓣(去皮)、香茅2支、红辣椒4条、辣椒干6条(浸软)、黄姜30克、马来栈1小片(烤香)

调味料 :
水300毫升、阿三膏100克(切开,过滤,去渣)、鱼露1大匙、盐1小匙、糖2大匙

做法 :
1. 用3大匙油将香料爆香,加入调味料煮滚。(图1-6)
2. 加入材料煮滚至熟即可。(图7-9)

INGREDIENTS :
500g prawns(washed), 300g pineapple(cut cubes), 1 onion(sliced), 100g lady fingers(cut into sections), 1 red chiuli sliced, 3 stalks kesum leaves

SPICES(GROUNDED) :
10 shallots (peeled), 4 pips garlic (peeled), 2 stalks lemongrass, 4 red chili, 6 dried chili (soaked), 30g turmeric, 1 small piece of Balacan (roasted)

SEASONING :
300ml water, 100g Asam paste (wash in water and filtered), 1 tbsp fish sauce, 1 tsp salt, 2 tbsp sugar

METHOD :
1. Sauté the spices with 3 tbsp of oil and then add in seasonings, bring to boil. (Pic 1-6)
2. Add in main ingredients and boil until prawns cooked. (Pic 7-9)
