黄梨鸡片Stir-fried Chicken Breast with Pineapple

【材料】
鸡胸肉1副、黄梨1/2粒、青红灯笼椒各1/2粒(切条)、鸡腿菇1条(切片
)、嫩姜1段(切片)、蒜茸1茶匙、青葱1棵(切段)

【腌料】
盐、胡椒粉、花雕酒及生粉适量

【调味料】
盐1/2茶匙、白糖1/2茶匙、蚝油1汤匙、麻油1茶匙、鱼露1 汤匙、胡椒粉
少许

【勾芡】
生粉+清水适量

【做法】
1.将鸡肉去皮切片,用腌料腌好,然后以温油泡至熟。(图1-2)
2.灯笼椒和鸡腿菇放入沸水中川烫片刻,捞出滴干。(图3)
3.另外以干净的锅热少许油,把蒜茸和姜片爆香,然后加入鸡腿菇,炒一
会后加入鸡肉、黄梨和青红灯笼椒,大火迅速炒均。(图4-6)
4.加入调味料,炒均勾芡盛出。

【Ingredients】
1 set chicken breast meat, 1/2 pineapple (peel & sliced), 1/2 each of green
& red capsicum (cut into strips), 1 drumstick mushroom (sliced), 1 block
ginger (sliced), 1 tsp chopped garlic, 1 stalk spring onion (cut blocks)

【Marinade】
Dash of salt, pepper, Chinese cooking wine and corn flour

【Seasoning】
1/2 tsp salt, 1/2 tsp sugar, 1 tbsp oyster sauce, 1 tsp sesame oil, 1 tbsp fish
sauce, dash of pepper

【Thickening】
some starch

【Method】
1.Remove skin of chicken breast, slice and marinades, blanch in warm oil
until cooked, drain.(pic 1-2)
2.Blanch capsicum and drumstick mushroom in boiling water, drain.(pic 3)
3.Heat some oil in a clean wok, sauté garlic and ginger until fragrant, toss in
drumstick mushroom, follow with chicken meat, pineapple and capsicum,
stir-fry briskly with high heat. (pic 4-6)
4.Add in seasoning and thicken with starch.
