【材料】
石斑鱼肉3块、NutriPlus Omega-3 菜园鸡蛋3粒、姜花2枝(剖开)、水蓼2束、清水650毫升、食油4汤匙、亚叁膏(以100毫
升清水洗出汁,过滤)、亚叁皮2片
【研磨香料】
红辣椒6条、辣椒干3条(浸泡)、黄姜1公分、香茅1枝、蓝姜3片、小葱头12粒、蒜头6瓣、莞荽粉1汤匙、咖哩粉1汤匙、峇拉
煎粉1茶匙
【调味料】
盐适量、白糖1茶匙、江鱼仔粉1茶匙
【装饰】
姜花丝1汤匙、薄荷叶适量
【做法】
1. 锅内注入半锅水,放入NutriPlus Omega-3 菜园鸡蛋以大火煮至将滚。熄火放置5分钟后才开盖。待鸡蛋凉后剥壳备用。(图1-2)
2. 起锅热油,把研磨香料、姜花、水蓼及香茅爆香。(图3-4)
3. 倒入3-4汤匙亚三汁和清水煮至滚,然后加入鱼块和亚叁皮。(图5-6)
4. 转小火焖煮8-10分钟,以调味料调味。
5. 加入水煮蛋,搅拌均匀。(图7)
6. 盛出装饰后即可上桌。(图8)
【Ingredients】
3 pieces Garoupa fish slices (lightly marinate with some salt), 3 NutriPlus Telur Kampung Omega-3 Eggs, 2 wild
ginger bud (cut into halves), 2 stalks polygonum, 650 ml water, 4 tbsp oil, 50g tamarind paste (wash with 100ml
water and filtered), 2 pieces dried tamarind skin (asam keeping)
【Grinded Spices】
6 fresh red chilies (seeded), 3 dried chilies (soaked), 1 cm fresh turmeric root, 1 stalk lemongrass, 3 slices galangal,
12 shallots, 6 cloves garlic, 1 tbsp ground coriander powder, 1 tbsp fish curry powder, 1 tsp shrimp paste
granules (belacan)
【Seasoning】
Adequate salt to taste, 1 tsp sugar or to taste, 1 tsp anchovy stock powder
【Garnishing】
1 tbsp finely shredded wild ginger bud, A sprig of peppermint leaves
【Method】
1. Place eggs into a pot and pour in cold water to cover; place over high heat. When the water just starts to
simmer, turn off heat, cover pan with a lid, and let stand
for 5 minutes. (pic 1-2)
2. Heat oil in a saucepan and sauté spice paste, wild ginger bud, polygonum stalks and lemongrass until
fragrant. (pic 3-4)
3. Pour in 3-4 tbsp tamarind juice and water, bring to a boil then add in fish slices and dried tamarind pieces.

4. Reduce heat and simmer for 8 – 10 minutes. Adjust with seasoning to taste.
5. Add in hard boiled eggs and stir briefly to coat eggs 咖哩鱼和蛋 with curry sauce. (pic 7)
6. Dish out and garnish to serve. (pic 8)
